These wholesome All Bran banana muffins are soft, lightly sweet and packed with fibre, making them a perfect everyday bake. The All Bran cereal softens in plant milk to create a tender texture, while mashed banana adds natural sweetness and moisture.

Ingredients

  • 1 cup All Bran cereal
  • 1 cup plant-based milk (oat, soy or almond)
  • 1 ripe banana, mashed
  • ¼ cup maple syrup or brown sugar
  • 2 tbsp olive oil or melted coconut oil
  • 1 tsp vanilla extract
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon (optional)
  • ¼ tsp salt
  • ½ cup raisins or chopped dates
  • ¼ cup chopped nuts (walnuts or pecans)
  • ½ cup grated apple or carrot

Directions

  1. Preheat the oven to 180°C.
  2. Line or lightly grease a muffin tray.
  3. In a large bowl combine the All Bran cereal and plant milk.
  4. Allow the mixture to sit for about 5–10 minutes until the cereal softens.
  5. Add the mashed banana, maple syrup (or brown sugar), olive oil and vanilla extract to the softened cereal mixture.
  6. Stir until well combined.
  7. In a separate bowl whisk together the whole wheat flour, baking powder, baking soda, cinnamon and salt.
  8. Add the dry ingredients to the wet mixture and stir gently until just combined.
  9. Fold in any optional add-ins such as raisins, nuts or grated apple.
  10. Avoid overmixing the batter.
  11. Divide the batter evenly among the muffin cups.
  12. Bake for about 20–25 minutes, or until a toothpick inserted into the centre comes out clean.
  13. Allow the muffins to cool in the tray for about 5 minutes before transferring them to a wire rack to cool completely.
