Ingredients

  • 1 jar or tin tuna, very well drained
  • 1 egg
  • 2–3 tbsp cottage cheese or Greek-style yoghurt
  • 1–2 tbsp oat flour
  • Fresh parsley or dill, finely chopped
  • Salt and black pepper, to taste
  • Lemon zest
  • Dijon or wholegrain mustard

Directions

  1. Place the tuna in a sieve and press firmly to remove as much liquid as possible.
  2. This step helps the patties hold their shape during cooking.
  3. Add the drained tuna to a bowl.
  4. Mix in the egg, cottage cheese or yoghurt, oat flour, chopped herbs, salt and black pepper.
  5. Add lemon zest or Dijon mustard if using.
  6. The mixture should be moist but able to hold together when pressed.
  7. If it feels too loose, add a little more oat flour.
  8. Form the mixture into small patties sized to fit a sandwich or burger.
  9. Flatten them slightly to ensure even cooking.
  10. Heat a lightly oiled pan over medium heat.
  11. Place the patties into the pan and cook without moving them until golden and firm on one side.
  12. Flip gently and cook the other side until cooked through.
  13. Remove from the pan and allow them to rest briefly before serving.
