These protein-packed tofu scramble wraps are a quick and nourishing plant-based breakfast filled with savoury tofu, spinach, turmeric and fresh herbs.

Tofu Scramble Breakfast Wraps

Ingredients

    • 1 block firm tofu, crumbled

    • 1 tsp olive oil

    • 1 tbsp nutritional yeast

    • 1 tsp turmeric

    • ½ tsp black salt (Kala Namak) (optional)

    • ½ tsp miso paste

    • ½ tsp garlic powder (optional)

    • ½ tsp onion powder (optional)

    • ¼ tsp black pepper

    • ½ cup fresh spinach, chopped

    • 1–2 wholewheat wraps

    • Fresh herbs (parsley, coriander or chives), chopped

    • Optional toppings:

    • Avocado slices

    • Cherry tomatoes

    • Vegan cheese

    Method

      1. Heat olive oil in a pan over medium heat.

      2. Crumble the firm tofu with your hands or a fork and add it to the pan. Cook for 2–3 minutes, stirring occasionally.

      1. Add turmeric, nutritional yeast, garlic powder, onion powder, black salt and black pepper.

      2. Stir well so the tofu is evenly coated with the spices and seasoning.

      1. In a small bowl dissolve the miso paste in about one tablespoon of warm water.

      2. Pour the miso mixture over the tofu scramble and stir well.

      3. Add the chopped spinach and cook for 1–2 minutes until the spinach is wilted and the scramble is well combined.

      1. Warm the wholewheat wraps in a dry pan or microwave for a few seconds to make them flexible.

      2. Spoon the tofu scramble into the centre of each wrap.

      3. Top with fresh herbs and optional toppings such as avocado slices, cherry tomatoes or vegan cheese.

      4. Fold the wraps tightly and serve warm.
