Ingredients

    • ½ cup barley flour

    • 2 cups plant milk (almond, oat, soy or macadamia)

    • ½–1 cup water (adjust for desired thickness)

    • 2–3 soft dates, chopped OR 1–2 tbsp maple syrup

    • ¼ tsp cinnamon (optional)

    • Pinch of salt

    • Optional additions:

    • 1 tbsp nut butter or coconut cream

    • ½ tsp cardamom or dash of vanilla

    • Drizzle of date syrup or almond butter

    • Crushed nuts

    • Sprinkle of cinnamon

    Method

      1. In a pot over medium heat, toast the barley flour for about 5–7 minutes, stirring frequently.

      2. Cook until the flour changes from pale beige to a light golden colour and develops a nutty aroma.

      3. Remove from heat and allow it to cool slightly.

      1. In a small bowl whisk the toasted barley flour with a little water until a smooth paste forms.

      2. This helps prevent lumps when cooking the porridge.

      1. In a saucepan warm the plant milk over medium heat.

      2. Gradually whisk in the barley paste until fully combined.

      3. Add chopped dates (or maple syrup), cinnamon and salt.

      4. Cook on low–medium heat for 10–15 minutes, whisking frequently until the porridge thickens and becomes creamy.

      1. Stir in nut butter or coconut cream if using and simmer for another 1–2 minutes.

      2. Adjust thickness with extra plant milk or water if needed.

      1. Pour the warm porridge into bowls.

      2. Top with sliced banana or poached pear, a drizzle of date syrup or almond butter and a sprinkle of crushed nuts or cinnamon.

      3. Serve immediately.
