Ingredients

  • 2 Sweet Potato & Cottage Cheese Waffles (recipe already on site)
  • 1–2 Tuna Patties (recipe already on site)
  • Mashed avocado with lemon and salt
  • Cottage cheese with black pepper
  • Soft feta crumble
  • Thinly sliced cherry tomatoes
  • Light cucumber salad
  • Shredded cabbage or lemon slaw
  • Rocket (arugula)
  • Wilted spinach
  • Fresh herbs
  • Fried egg
  • Yogurt sauce made with yogurt, lemon, and herbs

Directions

  1. Make the sweet potato waffles and tuna patties using the previously published recipes, or reheat them gently if they were prepared earlier.
  2. Slice the vegetables and prepare your chosen creamy layer such as mashed avocado or cottage cheese.
  3. Place one sweet potato waffle on a plate.
  4. Spread the avocado, cottage cheese, or feta layer evenly over the waffle.
  5. Add the tuna patty on top.
  6. Layer with greens and vegetables.
  7. Place the second waffle on top to close the sandwich.
  8. Serve immediately.
