Ingredients

  • 1 medium sweet potato, fully cooked (roasted, steamed or leftover)
  • 2–3 eggs
  • 1 cup baby spinach
  • 5–7 cherry tomatoes, halved
  • Small amount of cheese
  • Olive oil or butter
  • Salt and black pepper

Directions

  1. Dice the cooked sweet potato into small cubes and season lightly with salt.
  2. Using fully cooked sweet potato ensures the omelette cooks evenly and stays tender.
  3. Heat a pan over medium heat with a small amount of olive oil or butter.
  4. Place the cherry tomatoes cut-side down and cook for about 1–2 minutes until slightly blistered.
  5. This step helps evaporate excess moisture.
  6. Add the diced sweet potato to the pan and warm through.
  7. Add the spinach and cook just until wilted, about 20–30 seconds.
  8. At this stage the vegetables should be warm but not watery.
  9. Reduce the heat to medium-low before adding the eggs.
  10. This ensures soft, tender eggs rather than a dry omelette.
  11. Whisk the eggs lightly with salt and pepper.
  12. Pour the eggs evenly over the vegetables and allow the edges to begin setting.
  13. When the edges are set but the centre remains slightly soft, add cheese if using.
  14. Fold the omelette or cover briefly to finish cooking.
