This strawberry chia compote is a simple, naturally sweet fruit topping that comes together in minutes. Made with juicy strawberries, maple syrup and chia seeds, it thickens naturally into a soft jam-like consistency without the need for refined sugar or starches.


The chia seeds absorb the strawberry juices as the compote cools, creating a beautifully spoonable texture that’s perfect for yogurt bowls, granola, waffles or pancakes. A touch of lemon brightens the flavour, while vanilla adds subtle warmth.

Strawberry Chia Compote (Naturally Thickened Fruit Sauce)

Ingredients

    • 2 cups frozen strawberries
    • 1–2 tbsp maple syrup (adjust to taste)
    • 1–2 tsp lemon juice
    • Pinch of salt
    • 1–1½ tbsp chia seeds

    • ½ tsp vanilla extract
    • Zest of ½ lemon

    Method

      1. Add the frozen strawberries to a small saucepan and cook over medium heat.

      2. Within about 3–5 minutes the strawberries will begin releasing their juices and soften.

      1. Once the mixture begins to bubble, gently mash about half of the strawberries with the back of a spoon.

      2. Leave some pieces whole to create texture.

      3. Add the maple syrup, lemon juice and a pinch of salt.

      4. Simmer for about 5–8 minutes until the mixture becomes slightly reduced and glossy.

      1. Turn off the heat.

      2. Stir in the chia seeds along with vanilla extract and lemon zest if using.

      1. Allow the compote to sit for 10–15 minutes.

      2. During this time the chia seeds absorb the liquid and thicken the mixture into a soft jam-like consistency.

      1. If the compote becomes too thick, stir in 1 tablespoon of warm water.

      2. If it is too loose, add an additional ½ tablespoon chia seeds and allow it to sit for another 10 minutes.
