Ingredients

  • 1 can (400g) chickpeas, drained and rinsed
  • 1 tsp olive oil or coconut oil
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp maple syrup (or date syrup or agave)
  • 1 tbsp tomato paste
  • ½ tsp smoked paprika (or regular paprika)
  • ½ tsp Dijon or wholegrain mustard
  • ¼ tsp black pepper
  • Squeeze of lemon juice
  • Optional: pinch chili flakes for heat

Directions

  1. Heat the oil in a pan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the drained chickpeas and toss to coat in the oil and garlic.
  3. Stir in the soy sauce, maple syrup, tomato paste, mustard, smoked paprika, and black pepper.
  4. Cook for 5–7 minutes, stirring often, until the sauce thickens and becomes glossy, coating the chickpeas.
