Ingredients

  • 1 cup millet
  • 1 cup coconut milk
  • 1 cup oat milk
  • ½–1 cup water (adjust as needed)
  • Pinch salt
  • ½ tsp cinnamon
  • ¼ tsp ground cardamom
  • Pinch nutmeg
  • 1–2 tsp coconut sugar
  • Sultanas
  • Cashew butter
  • Toasted almonds
  • Hemp seeds

Directions

  1. Rinse the millet well under water.
  2. Add to a dry pot and toast for 2–3 minutes until slightly nutty.
  3. Pour in the coconut milk, oat milk, water, salt, cinnamon, cardamom, and nutmeg.
  4. Bring to a gentle boil.
  5. Lower the heat and let it simmer for 15–18 minutes, stirring occasionally, until the millet softens and becomes creamy.
  6. Add a splash of oat milk or water if needed to reach a soft, spoonable consistency.
  7. Stir in the coconut sugar.
  8. Taste and adjust spices or richness as desired.
  9. Spoon into bowls and top with sultanas, nut butter, nuts, and seeds.
