Onion, celery and carrots create a naturally savoury base, while ginger and turmeric bring warmth and anti-inflammatory benefits. Apple cider vinegar helps draw minerals from the vegetables, making the broth extra nourishing.


Finished with a spoon of miso and a splash of tamari for umami depth, this broth is perfect for sipping on its own or using as a base for soups, stews and grains.

Ingredients

  • 1 small onion, chopped
  • 1 head garlic cloves, smashed
  • 4 medium carrots, chopped
  • 1 bunch celery stalks, chopped
  • Handful chopped fennel (optional)
  • Small knob fresh ginger, sliced
  • Few slices fresh turmeric OR ½ tsp ground turmeric
  • 1 tsp apple cider vinegar
  • Few sprigs thyme
  • Handful fresh parsley
  • 4–7 cups water
  • Sea salt to taste
  • 1 tsp red miso paste
  • 1 tbsp tamari soy sauce

Directions

  1. Add the onion, garlic, carrots, celery, fennel (if using), ginger, turmeric, apple cider vinegar, thyme and parsley to a large pot.
  2. Pour in the water.
  3. Bring the pot to a gentle boil.
  4. Reduce the heat to low, cover and allow the broth to simmer for about 30–40 minutes.
  5. Strain the broth into a bowl or container, discarding the vegetables and herbs
  6. Stir in the miso paste and tamari soy sauce.
  7. Taste and adjust salt if needed.
  8. Sip warm on its own or use as a base for soups, stews or cooking grains.
