Ingredients

  • 2 cups cooked butter beans
  • 3–4 sun-dried tomatoes, finely chopped
  • 1 tablespoon miso paste
  • 1 tablespoon soy sauce
  • 2–4 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon smoked paprika
  • ½–¾ cup bean cooking liquid, water, or mushroom stock
  • 1 teaspoon rice vinegar or lemon juice
  • 1 teaspoon sesame oil
  • 1 teaspoon chili oil (optional)
  • Spring onions
  • Sesame seeds
  • Chili flakes
  • Steamed jasmine rice
  • Quinoa
  • Millet

Directions

  1. In a small bowl mix the miso paste, soy sauce, and two tablespoons of warm water.
  2. Stir until smooth and set aside.
  3. Heat a small amount of oil in a pan over medium heat.
  4. Add the minced garlic and grated ginger.
  5. Cook for about 30 seconds until fragrant.
  6. Add the smoked paprika and chopped sun-dried tomatoes.
  7. Cook for about 1–2 minutes so the tomatoes soften and the paprika releases its aroma.
  8. Add the butter beans and about half a cup of bean broth or water.
  9. Allow the mixture to simmer gently.
  10. Stir in the miso mixture and cook for about 3–5 minutes until the sauce thickens slightly and coats the beans.
  11. Turn off the heat and add the sesame oil, rice vinegar or lemon juice, and chili oil if using.
  12. Taste and adjust seasoning if needed.
  13. Serve warm.
