A colourful mix of marinated beans and crisp green beans is tossed in a smoky tomato dressing made with red wine vinegar, garlic, and smoked paprika. Sun-dried tomatoes, sweet peppers, and fresh parsley add depth and brightness.

Ingredients

  • ½ cup haricot (navy) beans
  • ½ cup butter beans
  • ½ cup red kidney beans
  • ½ cup borlotti beans
  • 1 tbsp lemon juice
  • ½ tsp salt
  • 200 g green beans, trimmed
  • 3 tbsp tomato passata or crushed tomatoes
  • 1½ tbsp red wine vinegar or apple cider vinegar
  • 1 tsp sugar
  • 1 small garlic clove, grated
  • ½ tsp smoked paprika
  • Pinch black pepper
  • 1½–2 tbsp neutral oil such as canola oil
  • Salt to taste
  • ½ tsp cornflour mixed with 1 tsp water
  • ¼ cup finely chopped onion
  • ¼ cup chopped mixed peppers
  • 2 tbsp chopped sun-dried tomatoes
  • 2 tbsp finely chopped parsley

Directions

  1. Combine the haricot beans, butter beans, kidney beans, and borlotti beans in a bowl.
  2. Add lemon juice and salt, then toss gently.
  3. Allow the beans to sit while preparing the remaining ingredients so they lightly marinate.
  4. Bring a pot of well-salted water to a boil.
  5. Add the trimmed green beans and cook for about 2–3 minutes until bright green and just tender.
  6. Drain immediately and cool quickly with cold water or allow them to air cool.
  7. This helps maintain their crisp texture.
  8. In a bowl whisk together the tomato passata, vinegar, sugar, grated garlic, smoked paprika, black pepper, oil, and salt.
  9. Taste and adjust seasoning.
  10. If you prefer a thicker deli-style dressing, whisk in the cornflour mixture.
  11. Finely chop the onion, peppers, sun-dried tomatoes, and parsley.
  12. Combine the marinated bean mixture with the green beans, chopped vegetables, sun-dried tomatoes, and parsley.
  13. Pour over the smoky tomato dressing and toss gently until evenly coated.
  14. Allow the salad to sit for at least 30 minutes before serving so the flavours fully develop.
  15. Serve chilled or at room temperature.
