Smashed Chickpea Mayo Sandwich

    • 1 can (400 g) chickpeas, drained and rinsed

    • 2–3 tbsp vegan mayo (adjust for creaminess)

    • 1 tsp Dijon mustard (optional)

    • 1 tsp lemon juice

    • 1 tbsp chopped red onion or spring onion

    • 1 tbsp finely chopped celery (optional)

    • 1 tbsp chopped fresh herbs (thyme and oregano work well)

    • ¼ tsp garlic powder (optional)

    • Salt and black pepper to taste

    • 4 slices sourdough bread

    • Lettuce, tomato slices, or cucumber (optional)

    Method

      1. Add the chickpeas to a mixing bowl.

      2. Using a fork or potato masher, roughly mash the chickpeas, leaving some chunks for texture.

      1. Add vegan mayo, Dijon mustard, lemon juice, onion, celery, herbs, garlic powder, salt, and pepper.

      2. Stir until well combined and creamy.

      3. Taste and adjust seasoning or add more lemon juice or mayo if needed.
