Slow-roasted tomatoes are one of the simplest ways to transform soft or overripe tomatoes into something deeply flavourful and versatile. Roasting them gently in the oven concentrates their natural sweetness while creating a rich, jammy texture that works beautifully in many dishes.


With just olive oil, salt and pepper, the tomatoes slowly collapse and caramelise, developing a savoury depth that feels almost sauce-like. Optional herbs, garlic or chilli flakes can add extra flavour, but the tomatoes themselves remain the star.


These roasted tomatoes are incredibly useful in everyday cooking. Spoon them onto toast, toss them through salads or grains, add them to eggs or seafood dishes, or blend them into sauces and soups.

Ingredients

  • Any tomatoes (cherry, plum, heirloom or mixed varieties)
  • Olive oil
  • Salt
  • Black pepper
  • Optional additions:
  • Whole garlic cloves
  • Fresh or dried thyme or oregano
  • Chilli flakes

Directions

  1. Preheat the oven to 160–170°C.
  2. If using larger tomatoes, cut them into wedges. Smaller tomatoes such as cherry tomatoes can be left whole or halved.
  3. Place the tomatoes on a baking tray.
  4. Drizzle generously with olive oil.
  5. Season with salt and black pepper.
  6. Add garlic cloves, herbs or chilli flakes if desired.
  7. Toss gently so everything is evenly coated.
  8. Spread the tomatoes in a single layer on the tray.
  9. Roast for about 60–90 minutes, stirring once or twice during cooking.
  10. The tomatoes should become soft, collapsed and slightly caramelised with a jammy texture.
  11. Avoid roasting until crispy — the goal is soft and concentrated.
