Ingredients

  • 1–2 ripe quinces, peeled, cored and cut into wedges or cubes
  • 2 tbsp maple syrup or agave (adjust to taste)
  • 1 tbsp orange juice
  • ½ tsp ground cinnamon
  • ¼ tsp ground cardamom (optional)
  • ½ cup water or orange juice

Directions

  1. Preheat the oven to 180°C.
  2. Place the quince wedges in a baking dish.
  3. Add maple syrup, orange juice, cinnamon, cardamom and water or orange juice.
  4. Toss gently so the fruit is evenly coated.
  5. Cover the dish with foil and bake for 45–60 minutes until the quince becomes soft and tender.
  6. For deeper flavour, remove the foil during the last 10–15 minutes of baking to allow the fruit to caramelise slightly.
  7. Allow the quince to cool slightly before serving.
  8. Serve warm or at room temperature.
