Ingredients

  • 1 cup cooked and mashed sweet potato
  • ½ cup cottage cheese (blended smooth)
  • 2 eggs
  • ½ cup oat flour (or blended oats)
  • 1 tsp baking powder
  • ½ tsp salt
  • Black pepper
  • Optional seasoning:
  • Pinch smoked paprika
  • Pinch garlic powder

Directions

  1. Add mashed sweet potato, cottage cheese, eggs, oat flour, baking powder, salt and pepper to a blender.
  2. Blend until the batter is smooth, thick and pourable.
  3. Preheat the waffle maker fully for about 3–5 minutes.
  4. A fully heated waffle iron helps prevent sticking and ensures proper browning.
  5. Once the waffle maker is hot, lightly oil the plates.
  6. Use a small amount of neutral oil such as avocado or canola oil and spread it with a paper towel to create a thin coating.
  7. Re-oil between waffles if needed.
  8. Pour about 2 tablespoons of batter onto the waffle iron if using a mini waffle maker, or enough batter to lightly cover the surface.
  9. Close the waffle maker gently and allow the waffles to cook until golden and crisp.
  10. Avoid pressing down on the waffle maker, as this can make the waffles dense.
  11. Remove the waffles carefully and serve warm with savoury toppings of your choice.
