Ingredients

  • 3¾ cups water (about 940 ml)
  • 5 rooibos tea bags or 3¾ tsp loose-leaf rooibos
  • 2 cinnamon sticks
  • 7–8 whole cloves
  • 4–5 slices fresh ginger
  • ¼ tsp black pepper
  • 1¼ cups sweetened macadamia milk (about 310 ml)
  • 1¼ tsp ground cardamom
  • 2–3 tsp maple syrup
  • Honey
  • 1–2 Medjool dates

Directions

  1. Add water, cinnamon sticks, cloves, ginger, and black pepper to a medium pot.
  2. Simmer gently on low heat for 8–10 minutes with the lid partially on.
  3. Add the rooibos tea bags or loose-leaf tea.
  4. Steep on very low heat for about 5 minutes.
  5. Stir in the macadamia milk and ground cardamom.
  6. Warm gently for 2–3 minutes without allowing the chai to boil.
  7. Add sweetener if desired.
  8. Strain the chai into cups or a serving jug.
  9. Serve warm.
