Ingredients

  • 2 whole red bell peppers
  • ¼ cup sun-dried tomatoes
  • 2 garlic cloves or 2 tbsp crushed garlic
  • 2 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tbsp tomato paste
  • ¼ cup plant milk or coconut cream
  • 2 tbsp nutritional yeast
  • 200 g silken tofu
  • Salt to taste
  • Black pepper to taste
  • 1 tbsp lemon juice or splash of vinegar
  • Pinch of chilli flakes or cayenne

Directions

  1. Preheat the grill or broiler.
  2. Halve and deseed the red peppers and place them skin side up under the grill.
  3. Cook for about 10–15 minutes until the skins are charred.
  4. Transfer the peppers to a bowl and cover for 5–10 minutes to allow them to steam.
  5. Peel off the skins.
  6. Add the roasted peppers, sun-dried tomatoes, garlic, olive oil, smoked paprika, tomato paste, plant milk or coconut cream, nutritional yeast, salt, black pepper, and lemon juice to a blender.
  7. Blend until smooth and creamy.
  8. If using silken tofu, blend it into the sauce until fully incorporated.
  9. Taste the sauce and adjust seasoning if needed.
  10. Thin with a splash of pasta water or plant milk if the sauce is too thick.
  11. Toss through hot pasta or gnocchi and serve immediately.
