Ingredients

  • 1 large cauliflower, cut into florets
  • 1½ cups cooked chickpeas, drained and very dry
  • 3 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp turmeric
  • ½ tsp garlic powder
  • 1 tsp salt

Directions

  1. Preheat the oven to 220°C.
  2. Line a large baking tray with parchment paper if desired.
  3. In a large bowl combine cauliflower florets and chickpeas.
  4. Add olive oil, cumin, coriander, turmeric, garlic powder and salt.
  5. Toss well until everything is evenly coated.
  6. Spread the mixture onto the baking tray in a single layer.
  7. Avoid overcrowding so the vegetables roast rather than steam.
  8. Roast for 30–40 minutes, turning once halfway through cooking.
  9. The cauliflower should have caramelised edges and the chickpeas should feel slightly crisp and roasted.
  10. Allow the mixture to cool completely before storing.
