One-Pan Lemon Garlic Salmon with Crispy Potatoes & Tenderstem Broccoli

Ingredients

  • 2 salmon fillets (120–150 g each)
  • 250 g baby potatoes, cut into wedges or cubes
  • 150 g tenderstem broccoli
  • 2 garlic cloves, minced or sliced
  • 1 tbsp olive oil
  • Juice and zest of ½ lemon
  • ½ tsp smoked paprika (optional)
  • Salt and black pepper
  • Fresh dill or parsley
  • Lemon wedges

Directions

  1. Preheat the oven to 200°C (180°C fan).
  2. Toss the potatoes with half of the olive oil, garlic, smoked paprika, salt and black pepper.
  3. Spread them on a baking tray and roast for about 15–20 minutes until they begin to turn golden.
  4. Drizzle the salmon fillets with the remaining olive oil.
  5. Season with lemon juice, lemon zest, salt and black pepper.
  6. Push the potatoes to the sides of the tray and place the salmon fillets skin-side down in the centre.
  7. Toss the tenderstem broccoli with a small drizzle of olive oil, salt and pepper.
  8. Place it on the tray beside the salmon.
  9. Return the tray to the oven and roast for 12–15 minutes until the salmon flakes easily and the broccoli is tender.
  10. Sprinkle fresh dill or parsley over the tray.
  11. Serve with lemon wedges and an extra squeeze of lemon juice over the potatoes.
