Moroccan-Style Marinated Boiled Eggs

These Moroccan-style marinated eggs are one of the easiest ways to turn simple boiled eggs into something deeply flavourful. A bold marinade of olive oil, harissa and lemon infuses the eggs with warmth, spice and brightness.


The key is allowing the eggs time to absorb the marinade. Jammy eggs work especially well because the soft centre carries the flavours beautifully, but fully set eggs are also delicious.


They’re perfect for meal prep, protein-rich snacks, lunch bowls or adding depth to simple salads. After a few hours in the fridge, the eggs become savoury, slightly spicy and incredibly satisfying.

Ingredients

  • 4–6 eggs
  • 3 tbsp extra virgin olive oil
  • 1 tsp harissa paste
  • 1 tbsp fresh lemon juice
  • Pinch of salt
  • ¼ tsp ground cumin or ground coriander
  • 1–2 tbsp fresh parsley or dill, finely chopped
  • Optional boosters:
  • Garlic powder or crushed garlic
  • Pinch smoked paprika or cinnamon
  • Small spoon tahini
  • Finely chopped preserved lemon

Directions

  1. Bring a pot of water to a gentle boil.
  2. Carefully add the eggs and cook according to your preferred texture:
  3. • Jammy eggs: 7–8 minutes
  4. • Fully set eggs: 9–10 minutes
  5. Transfer the eggs immediately to cold water and allow them to cool before peeling.
  6. In a small bowl whisk together olive oil, harissa paste, lemon juice and salt.
  7. Add cumin or coriander if using.
  8. Taste the marinade , it should be slightly spicy, tangy and balanced.
  9. Place the peeled eggs in a glass container or jar.
  10. Pour the marinade over the eggs and turn them gently to coat.
  11. Seal the container and refrigerate.
  12. Allow the eggs to marinate for at least 4 hours.
  13. For best flavour, leave them overnight (8–24 hours).
