Ingredients

  • 100 g silken tofu, drained
  • ½ small ripe avocado (about 50–60 g)
  • 1½ tbsp unsweetened cocoa powder
  • 1–2 tbsp maple syrup (adjust to taste)
  • ¼ tsp vanilla extract
  • Pinch of salt
  • 1½ tsp ground coffee
  • 1 tbsp hot water
  • 1–2 squares melted dark chocolate
  • Cacao nibs
  • Crushed pistachios
  • Coconut flakes
  • Banana slices
  • Granola or biscuit crumbs
  • Nut butter or tahini swirl

Directions

  1. In a small bowl mix the ground coffee with hot water.
  2. Allow it to sit for about 2–3 minutes to release its flavour.
  3. Strain if you prefer a smoother mousse.
  4. Add silken tofu, avocado, cocoa powder, maple syrup, vanilla extract, salt and the bloomed coffee to a blender.
  5. Blend until the mixture becomes completely smooth and creamy.
  6. If using melted dark chocolate, add it to the blender and blend briefly until fully incorporated.
  7. Taste the mousse and adjust sweetness or flavour.
  8. Add more maple syrup for sweetness, extra cocoa powder for deeper chocolate flavour, or a pinch of cinnamon for warmth.
  9. Serve immediately for a soft mousse texture.
  10. For a thicker dessert, chill in the refrigerator for about 30–60 minutes before serving.
