Maple Peach Explosion Oats (Warm Peach Oatmeal with Roasted Peaches)

These maple peach explosion oats are the ultimate cozy breakfast for peach season. Sweet peaches are layered three ways: a jammy peach mash folded into creamy oats, a reserved peach compote for topping, and caramelised roasted peach halves for a beautiful finish.


Cooking the oats with peach compote infuses them with natural sweetness and flavour, while chia seeds add extra fibre and texture. The roasted peaches become soft, juicy and lightly caramelised, bringing warmth and depth to the bowl.


Finished with a splash of plant milk and an extra drizzle of maple syrup, this bowl is comforting, nourishing and perfect for slow mornings.

Ingredients

  • 2 large ripe peaches, pitted
  • 1 – 1½ tbsp maple syrup
  • ½ cup rolled oats
  • 1 tbsp chia seeds
  • ¾ – 1 cup water
  • Pinch salt (optional)
  • ¼ – ½ cup plant-based milk
  • Extra maple syrup
  • Ground cinnamon
  • Crushed nuts or granola

Directions

  1. Cut one peach into wedges.
  2. Add the wedges to a small saucepan with 2–3 tablespoons of water and cook over medium heat for about 3–4 minutes until softened.
  3. Add maple syrup and cook for another 2–3 minutes until the peaches become soft and jammy.
  4. Mash lightly with a fork or spoon to create a chunky peach compote.
  5. Scoop out about half of the mixture and set aside for topping.
  6. To the remaining peach mixture in the saucepan add rolled oats, chia seeds, water and a pinch of salt.
  7. Cook over medium-low heat for about 5–7 minutes, stirring occasionally until the oats become soft and creamy.
  8. Cut the second peach in half.
  9. Place the halves cut-side up in an air fryer and cook at 180°C for about 6–8 minutes until soft and lightly caramelised.
  10. Very ripe peaches may only need around 5 minutes.
  11. Spoon the warm peach oats into a bowl.
  12. Top with the reserved maple peach mash, plant-based milk and the roasted peach halves.
  13. Finish with an extra drizzle of maple syrup if desired.
