Ingredients

  • 3 tbsp fresh lime juice
  • 1 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tbsp rice vinegar
  • 1 small garlic clove, grated
  • 1 tsp grated ginger
  • 1–2 red chillies, finely chopped
  • 1 tsp sesame oil
  • 1 tbsp neutral oil
  • 2 portions egg noodles
  • 75 g spring onions, finely chopped
  • 20 g fresh coriander, finely chopped
  • 1 tbsp crushed garlic
  • 1 tsp grated ginger
  • 1 tsp lime zest
  • ¼ cup soy sauce
  • 1 tbsp gochujang paste
  • 1 tsp sesame oil
  • 1 tbsp hot coconut oil
  • Thai lime chilli dressing
  • Juice of 1 lime
  • Extra coriander
  • Chilli flakes (optional)

Directions

  1. Bring a pot of water to a boil.
  2. Cook the noodles according to the package instructions until just al dente.
  3. Drain and rinse briefly with warm water to remove excess starch.
  4. Set aside.
  5. In a large bowl combine the chopped spring onions, coriander, crushed garlic, grated ginger, and lime zest.
  6. Add soy sauce, gochujang paste, sesame oil, hot coconut oil, and the Thai lime chilli dressing.
  7. Mix well until everything is combined.
  8. Add the warm cooked noodles to the bowl.
  9. Toss thoroughly so the noodles absorb the sauce and aromatics.
  10. Squeeze fresh lime juice over the noodles and toss again.
  11. Taste and adjust seasoning if needed.
  12. Transfer the noodles to bowls.
  13. Top with extra coriander, sliced spring onions, and chilli flakes if desired.
  14. Serve immediately.
