Ingredients

  • 1 cup fresh strawberries, hulled and chopped
  • 2–3 tbsp brown sugar (adjust to taste)
  • ½ cup plant milk
  • Cooked strawberry pulp from the syrup
  • 1 tsp good quality matcha powder
  • ¼ cup hot water
  • Ice cubes
  • Strawberry syrup
  • Strawberry milk
  • Whisked matcha

Directions

  1. Add chopped strawberries and brown sugar to a small saucepan over medium heat.
  2. Cook for 3–5 minutes until the strawberries release their juices and form a syrup.
  3. Strain the mixture through a sieve to separate the smooth strawberry syrup from the pulp.
  4. Add the reserved strawberry pulp and plant milk to a blender.
  5. Blend until smooth and creamy.
  6. Sift the matcha powder into a bowl to remove clumps.
  7. Add hot water and whisk vigorously until frothy.
  8. Fill a glass with ice cubes.
  9. Add a drizzle of strawberry syrup.
  10. Pour in the strawberry milk.
  11. Slowly pour the whisked matcha over the top.
  12. Stir gently before drinking.
