    • 1 cup fresh strawberries, hulled and chopped

    • 2–3 tbsp brown sugar (adjust to taste)

    • ½ cup plant milk

    • Cooked strawberry pulp from the syrup

    • 1 tsp good quality matcha powder

    • ¼ cup hot water

    • Ice cubes

    • Strawberry syrup

    • Strawberry milk

    • Whisked matcha

    Method

      1. Add chopped strawberries and brown sugar to a small saucepan over medium heat.

      2. Cook for 3–5 minutes until the strawberries release their juices and form a syrup.

      3. Strain the mixture through a sieve to separate the smooth strawberry syrup from the pulp.

      1. Add the reserved strawberry pulp and plant milk to a blender.

      2. Blend until smooth and creamy.

      1. Sift the matcha powder into a bowl to remove clumps.
