These gentle stewed apples are soft, warming and incredibly comforting. Cooked slowly with water, cinnamon and warming spices, they transform into a naturally sweet apple compote that’s perfect for breakfast bowls, yogurt or oats.


Unlike sugary fruit sauces, this version relies mostly on the natural sweetness of apples. A small pinch of salt enhances the flavour while ginger and cardamom add warmth and depth without overpowering the fruit.

Ingredients

  • 5–6 medium apples, peeled, cored and diced into small cubes
  • ¾ cup water
  • ½–¾ tsp ground cinnamon
  • ¼ tsp ground ginger
  • ⅛–¼ tsp ground cardamom (optional)
  • Pinch of salt
  • 1–2 tbsp honey or maple syrup
  • ½ tsp vanilla extract
  • OR thin strip of lemon peel (remove before storing)

Directions

  1. Peel, core and dice the apples into small, evenly sized cubes so they cook evenly.
  2. Add the apples and water to a medium saucepan.
  3. Cover and bring to a gentle simmer over medium heat.
  4. Lower the heat to medium-low once simmering.
  5. Cook covered for about 10–12 minutes, stirring once or twice, until the apples begin softening but still hold their shape.
  6. Stir in cinnamon, ginger, cardamom and a pinch of salt.
  7. Mix gently so the apples are evenly coated.
  8. Remove the lid and cook for another 5–8 minutes, stirring occasionally.
  9. The liquid should reduce slightly and become lightly syrupy while the apples turn soft and tender.
  10. Turn off the heat.
  11. Stir in 1 tablespoon honey or maple syrup, then taste and adjust sweetness if needed.
  12. Allow the stewed apples to cool completely before transferring to jars or containers.
