Ingredients

  • 1 cup self-raising flour
  • ¼ tsp nutmeg
  • ¼ tsp cinnamon (optional but recommended)
  • Pinch of salt
  • 1½ cups cooked and mashed orange sweet potato
  • 1½ cups almond milk
  • 2 eggs
  • ¼ cup melted butter
  • 1 tsp vanilla extract (optional)
  • Maple syrup
  • Cottage cheese or cream cheese
  • Fresh fruit (berries, banana, or stewed fruit)

Directions

  1. In a large bowl whisk together mashed sweet potato, almond milk, eggs, melted butter and vanilla extract until smooth.
  2. In another bowl combine the self-raising flour, nutmeg, cinnamon and salt.
  3. Add the wet ingredients to the dry ingredients and gently mix until just combined.
  4. The batter should be thick but pourable.
  5. Let the batter rest for about 5 minutes.
  6. Heat a lightly buttered or oiled pan over medium heat.
  7. Scoop about ¼ cup of batter onto the pan for each pancake.
  8. Cook for about 2–3 minutes until bubbles form on the surface and the edges begin to set.
  9. Flip and cook another 2 minutes until golden brown.
  10. Repeat with the remaining batter.
  11. Stack the pancakes and drizzle with maple syrup.
  12. Top with cottage cheese or cream cheese and fresh fruit.
  13. Serve warm.
