Fluffy Homemade Potato Gnocchi (Plant-Based)

Homemade potato gnocchi might sound intimidating, but it’s actually one of the simplest and most satisfying pasta dishes to make from scratch. With just potatoes, flour and salt, you can create soft, fluffy gnocchi that cook in minutes.


Using starchy potatoes helps create the perfect light texture, while gentle kneading keeps the dough tender. Once shaped, the gnocchi cook quickly in boiling water and are ready as soon as they float to the surface.

Ingredients

  • 500 g starchy potatoes (such as Up-to-Date potatoes)
  • ¾ cup flour (about 90–100 g), plus extra for dusting
  • 1 tsp salt

Directions

  1. Place the potatoes in a pot of salted water and boil them whole with the skins on for about 25–30 minutes until fork tender.
  2. Drain the potatoes and peel them while still warm.
  3. Mash thoroughly until completely smooth with no lumps.
  4. Place the mashed potatoes on a clean surface.
  5. Sprinkle the salt over the potatoes.
  6. Gradually add the flour and gently knead until the dough just holds together.
  7. The dough should be soft and slightly sticky.
  8. Divide the dough into four pieces.
  9. Roll each piece into a long rope about 2 cm thick.
  10. Cut into small pillows.
  11. Optional: roll each piece over the back of a fork to create grooves.
  12. Bring a pot of salted water to a boil.
  13. Drop the gnocchi into the boiling water.
  14. Once they float to the surface, cook for about 2–3 minutes until tender.
  15. Remove with a slotted spoon.
  16. Toss the cooked gnocchi with your favourite sauce and serve immediately
