Ingredients

  • 1 cup mashed sweet potato (about 250 g roasted sweet potato)
  • ¼ cup almond butter
  • ¼ cup cashew nut butter
  • â…“ cup date syrup
  • 1 tsp vanilla extract
  • ¼ cup cacao powder
  • 1 tsp baking powder
  • Pinch of salt
  • 2–3 tbsp dark chocolate chips

Directions

  1. Preheat the oven to 175°C.
  2. Line a small baking dish with parchment paper.
  3. In a bowl combine the mashed sweet potato, almond butter, cashew butter, date syrup and vanilla extract.
  4. Stir until smooth and well combined.
  5. Add cacao powder, baking powder and salt.
  6. Mix until a thick brownie batter forms.
  7. Fold in the dark chocolate chips if using.
  8. Spread the batter evenly into the lined baking dish.
  9. Bake for about 25–30 minutes until the brownies are set.
  10. Allow the brownies to cool completely before slicing.
  11. Cooling helps them firm up and develop a fudgy texture.
