Crispy Potato, Smoked Trout & Hummus Bowl

Ingredients

    • 3–4 medium potatoes, cubed
    • 1½ tbsp olive oil
    • Salt, to taste
    • Black pepper, to taste

    • 120–150 g smoked trout, flaked
    • 3–4 tbsp hummus
    • ½ cucumber, thinly sliced
    • Small handful fresh dill, chopped
    • ½ lemon
    • Olive oil
    • Black pepper

    • Chili flakes
    • Capers
    • Pickled onions

    Method

      1. Preheat the oven to 220°C.

      2. Toss the cubed potatoes with olive oil, salt and black pepper.

      3. Spread them evenly on a baking tray in a single layer.

      4. Roast for 25–30 minutes, flipping halfway through, until deep golden and crispy.

      5. Tip: Frozen potatoes work well for convenience. Cook them from frozen in an air fryer at 200°C for about 20 minutes until crisp.

      1. Slice the cucumber into thin half-moons or ribbons.

      2. In a small bowl toss the cucumber with a squeeze of lemon juice, a pinch of salt, a drizzle of olive oil and chopped dill.

      3. Allow the salad to sit while the potatoes finish roasting so the flavours can develop.

      1. Once thawed, gently break the smoked trout into large flakes.

      2. Avoid shredding it too finely so the pieces stay tender and more substantial.

      1. Spread hummus onto the base of a serving bowl.

      2. Add the hot crispy potatoes on top.

      3. Scatter the smoked trout flakes over the warm potatoes so the heat gently warms the fish.

      4. Add the cucumber salad to the side of the bowl.

      1. Top with extra fresh dill, a squeeze of lemon or a little lemon zest, a drizzle of olive oil and freshly cracked black pepper.

      2. Add optional toppings like chili flakes, capers or pickled onions if desired.

      3. Serve immediately.
