Ingredients

  • 3 medium white potatoes, peeled and cubed
  • 1 small head cauliflower, cut into florets
  • 1 garlic clove
  • 2–3 tbsp olive oil or vegan butter
  • ¼ cup unsweetened plant milk
  • Salt to taste
  • Black pepper to taste

Directions

  1. Add the potatoes, cauliflower, and garlic to a pot.
  2. Cover with water and add a pinch of salt.
  3. Bring to a boil and simmer for about 15 minutes until the vegetables are soft.
  4. Drain the vegetables and return them to the pot.
  5. Add olive oil or vegan butter, plant milk, salt, and black pepper.
  6. Mash until smooth or leave slightly chunky if preferred.
  7. For an ultra-creamy texture, blend briefly with a hand blender.
  8. Add more plant milk if needed to reach your preferred consistency.
  9. Taste and adjust seasoning before serving.
