Ingredients

  • 2 cups cooked butter beans
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • ½ onion, finely chopped
  • 1 tsp smoked paprika
  • 1 tsp dried coriander herb
  • 1 tbsp soy sauce or tamari
  • ½ cup vegetable stock
  • ½ cup coconut milk
  • 1 tbsp nutritional yeast
  • Juice of ½ lemon
  • Cracked black pepper
  • Salt to taste
  • Fresh parsley or basil, chopped
  • Avocado slices
  • Chilli oil
  • Toasted pumpkin seeds
  • Quick sautéed greens

Directions

  1. Heat the olive oil in a pan over medium heat.
  2. Add the chopped onion and cook for about 3–4 minutes until softened.
  3. Add the minced garlic, smoked paprika, and dried coriander.
  4. Cook for about 30–60 seconds until fragrant.
  5. Stir in the butter beans and toss well so they absorb the aromatics and spices.
  6. Pour in the vegetable stock, soy sauce, and coconut milk.
  7. Bring to a gentle simmer and cook for about 5–7 minutes until the sauce becomes slightly creamy.
  8. Stir in the nutritional yeast and lemon juice.
  9. Season with cracked black pepper and adjust salt if needed.
  10. Serve warm.
  11. Spoon the creamy butter beans over steamed jasmine rice.
  12. Finish with fresh herbs if using.
  13. You can also serve them with crusty bread, quinoa, couscous, or roasted vegetables.
