Creamy Hemp & Oat Porridge with Caramelised Apples

Ingredients

    • 6 tbsp oat flour (about ¾ cup / 65 g)
    • 6 tbsp hemp seeds (about ½ cup / 67 g)
    • 1 cup water (for blending)
    • 2¼–2½ cups plant milk
    • 1½ tsp cinnamon or cardamom (or both)
    • Pinch of salt
    • 1–2 tbsp coconut sugar (optional)

    • 3 small apples (or 2 large), sliced or diced

    • 1½ tsp coconut oil

    • (or a splash of water for oil-free version)

    • 1½ tbsp coconut sugar (about 21 g)

    • 1½ tsp cinnamon

    • Squeeze of lemon juice

    • Pinch of salt

    • Optional:

    • raisins or chopped dates

    Method

      1. Blend hemp seeds with 1 cup water until creamy.

      2. Add the oat flour and blend again until completely smooth.

      1. In a saucepan warm 2¼–2½ cups plant milk over medium heat.

      2. Add the hemp-oat mixture, spices, salt and sweetener if using.

      3. Simmer on low to medium heat for 8–10 minutes, stirring frequently until thick and creamy.

      1. In a separate pan cook the apples with:

      2. • coconut oil

      3. • coconut sugar

      4. • cinnamon

      5. • lemon juice

      6. • pinch of salt

      7. Cook for 5–7 minutes until the apples soften and become slightly syrupy.

      8. Optional: add raisins or chopped dates.
