Butter beans or cannellini beans simmer in a creamy coconut base with smoky paprika and sun-dried tomatoes, creating a bowl that is both hearty and nourishing. The caramelised onions bring sweetness, while a splash of sherry vinegar adds brightness to balance the richness.

Ingredients

  • 3 large yellow onions, thinly sliced
  • 1 head garlic (roasted or finely chopped)
  • 3 sprigs fresh thyme (or 1 tsp dried thyme)
  • 2 tbsp olive oil
  • ½ cup sun-dried tomatoes, chopped (in oil)
  • 1 tbsp oil from the sun-dried tomatoes
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tbsp smoked paprika
  • ½ cup full-fat coconut milk
  • 2 cans white beans (butter beans or cannellini), drained and rinsed
  • 1 cup fresh parsley, chopped
  • 1 tbsp sherry vinegar (or red wine vinegar / balsamic)
  • Fresh thyme or chives
  • Nutritional yeast or vegan parmesan (optional)

Directions

  1. Heat olive oil and 1 tablespoon of reserved oil from the sun-dried tomatoes in a large pan over medium-low heat.
  2. Add the sliced onions and a pinch of salt.
  3. Cook slowly for about 20–25 minutes, stirring occasionally, until the onions become soft, golden and caramelised.
  4. Stir in garlic, thyme, smoked paprika, black pepper and chopped sun-dried tomatoes.
  5. Cook for about 2–3 minutes until fragrant.
  6. Pour in the coconut milk and stir to combine.
  7. Let the mixture simmer for about 5 minutes until slightly thickened.
  8. Add the drained white beans and stir gently.
  9. Simmer for 10 minutes, allowing the beans to absorb the flavour.
  10. If the mixture becomes too thick, add a splash of water or vegetable stock.
  11. Stir in the sherry vinegar and half of the chopped parsley.
  12. Taste and adjust salt and seasoning if needed.
  13. Serve warm topped with fresh herbs and optional nutritional yeast or parmesan.
