    • 9 tbsp chickpea flour (besan)
    • 3 cups plant milk
    • 1½ cups water

    • 3 tbsp maple syrup or sweetener of choice
    • 1½ tsp cinnamon
    • ¾ tsp ground cardamom
    • 3 pinches salt
    • 1½ tsp vanilla extract

    • 2–3 tbsp nut butter
    • 3 tbsp coconut cream

    • 1–2 tbsp chia seeds
    • 1–2 tbsp hemp seeds
    • 1–2 tbsp ground flax seeds
    • 1 tbsp lemon zest

    • Stewed apples or pears
    • Sliced banana with cinnamon
    • Toasted seeds or nuts
    • Tahini or almond butter drizzle

    Method

      1. In a bowl, whisk the chickpea flour with a small splash of water until completely smooth and lump free.

      1. In a pot, gently warm the plant milk and remaining water over medium heat.

      1. Slowly whisk the chickpea slurry into the warm milk mixture.

      2. Continue whisking to prevent lumps from forming.
