Coconut Jasmine Rice (Pressure Cooker)

Ingredients

    • 1 cup jasmine rice
    • ¾ cup coconut milk
    • ¾ cup water
    • ½ tsp salt
    • 1 tsp sugar

    • Pandan leaf
    • Fresh ginger slices
    • Lemongrass, lightly crushed

    • Toasted coconut flakes
    • Fresh coriander
    • Lime wedges

    Method

      1. Rinse the jasmine rice under cold water two to three times until the water runs mostly clear.

      2. This helps remove excess starch and keeps the rice fluffy.

      1. Add the rinsed rice to the pressure cooker.

      2. Pour in the coconut milk and water, then add the salt and sugar.

      1. Add pandan, ginger, or lemongrass if using to infuse the rice with extra fragrance.
