Ingredients

  • 1 cup jasmine rice
  • ¾ cup coconut milk
  • ¾ cup water
  • ½ tsp salt
  • 1 tsp sugar
  • Pandan leaf
  • Fresh ginger slices
  • Lemongrass, lightly crushed
  • Toasted coconut flakes
  • Fresh coriander
  • Lime wedges

Directions

  1. Rinse the jasmine rice under cold water two to three times until the water runs mostly clear.
  2. This helps remove excess starch and keeps the rice fluffy.
  3. Add the rinsed rice to the pressure cooker.
  4. Pour in the coconut milk and water, then add the salt and sugar.
  5. Add pandan, ginger, or lemongrass if using to infuse the rice with extra fragrance.
  6. Seal the lid and cook on high pressure for about 4 minutes.
  7. Allow a natural pressure release for about 10 minutes, then release any remaining pressure.
  8. Remove the aromatics and gently fluff the rice with a fork.
  9. Serve warm.
