Ingredients

  • 3 medium apples, thinly sliced
  • 2 tbsp maple syrup
  • Juice of ½ lime
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ tsp vanilla extract
  • Pinch sea salt
  • 1 tbsp flour
  • 2 cups rolled oats
  • 2 tbsp chia seeds
  • 2 tbsp cacao powder
  • 2 cups plant-based milk
  • 1 tsp vanilla extract
  • 6–8 Medjool dates, chopped
  • ½ ripe banana, mashed
  • ¼ tsp sea salt
  • 1 tbsp almond butter or melted coconut oil
  • ½ banana, sliced
  • 2 tbsp chopped walnuts or pecans
  • 1 tbsp pumpkin seeds (optional)

Directions

  1. Preheat the oven to 180°C and lightly grease a medium baking dish.
  2. In a bowl combine the sliced apples, maple syrup, lime juice, cinnamon, nutmeg, vanilla extract, flour, and a pinch of sea salt.
  3. Toss until the apples are evenly coated.
  4. Spread the apples evenly in the baking dish and bake for about 18–20 minutes until softened and slightly jammy.
  5. In a bowl whisk together the plant milk, cacao powder, and vanilla extract until the cacao is fully dissolved.
  6. In a separate bowl combine the rolled oats, chia seeds, and sea salt.
  7. Pour in the chocolate milk mixture and stir well.
  8. Add the mashed banana, chopped dates, and almond butter, mixing until everything is evenly combined.
  9. Remove the apples from the oven.
  10. Pour the chocolate oat mixture over the warm apple layer and spread evenly.
  11. Top with sliced banana, chopped walnuts or pecans, and pumpkin seeds if using.
  12. Return the dish to the oven and bake for about 22–25 minutes until the oats are set and lightly golden on top.
  13. Allow the baked oats to cool for about 10–15 minutes before slicing.
  14. This helps the bake firm up and hold its shape.
