Ingredients

  • 1 head cauliflower, chopped into florets
  • 1 leek (white part only), cleaned and sliced
  • 1 small potato, peeled and diced
  • Fresh thyme sprigs or ½ tsp dried thyme
  • 3 cups unsweetened almond milk or vegetable broth
  • Salt to taste
  • White pepper to taste
  • Crispy leeks
  • Toasted almond slivers

Directions

  1. Heat a splash of oil or water in a large pot over medium heat.
  2. Add the sliced leeks and cook for about 5 minutes until soft and fragrant.
  3. Stir in the cauliflower florets and diced potato.
  4. Cook for about 2–3 minutes to lightly coat the vegetables in flavour.
  5. Add the thyme and pour in the almond milk or vegetable broth.
  6. Bring to a gentle boil, then reduce the heat and simmer for about 15–20 minutes until the vegetables are completely tender.
  7. Remove the thyme sprigs if using whole.
  8. Blend the soup until silky smooth using a blender or stick blender.
  9. Season with salt and white pepper to taste.
  10. Serve warm and top with crispy leeks or toasted almonds if desired.
