Ingredients

    • 1 small butternut squash, cubed and roasted or sautéed
    • 1 can butter beans, drained and rinsed
    • ½ onion, finely chopped
    • 2 garlic cloves, minced
    • 1 tsp curry powder or garam masala
    • ½ tsp ground cumin

    • 1 cup coconut milk
    • ½ cup water or vegetable stock

    • Salt, to taste

    • Lemon juice (to finish)

    • Optional additions:

    • Chilli flakes

    • Fresh parsley or coriander

    Method

      1. Heat a little oil in a pot over medium heat.

      2. Add the chopped onion and cook until soft and translucent.

      3. Add the garlic and cook for another minute until fragrant.

      1. Add curry powder or garam masala along with the cumin.

      2. Stir the spices in the oil for about 30 seconds until aromatic.

      1. Add the cubed butternut squash and butter beans to the pot.

      2. Stir gently to coat them with the aromatic mixture.
