It combines fluffy bulgur and quinoa cooked with finely diced vegetables for flavour, then tossed with spinach, sun-dried tomatoes, fresh herbs, and a bright pesto dressing. Creamy feta and toasted seeds add richness and crunch, creating a salad that feels both fresh and satisfying.


It’s perfect for meal prep, packed lunches, or as a colourful side dish alongside roasted vegetables or grilled proteins.

Ingredients

  • ¾ cup bulgur wheat
  • ¼ cup quinoa
  • 2 cups vegetable stock or water
  • 1 small carrot, finely diced
  • 1 small celery stalk, finely diced
  • 2 tbsp onion, finely diced
  • 1 bay leaf
  • Pinch salt
  • 2 cups baby spinach, roughly chopped
  • â…“ cup sun-dried tomatoes, sliced
  • 120 g feta, crumbled
  • 2 tbsp spring onion, sliced
  • 2 tbsp fresh mint, chopped
  • 3 tbsp basil pesto
  • 1 tbsp lemon juice
  • 1–2 tbsp olive oil
  • Pinch black pepper
  • Tiny pinch sugar or honey
  • 1 tbsp sesame seeds
  • 1 tbsp linseeds (flaxseeds)
  • 1 tbsp sunflower seeds

Directions

  1. Add the bulgur wheat, quinoa, diced carrot, celery, onion, bay leaf, salt, and water to a pot.
  2. Bring to a gentle simmer and cook for about 12–15 minutes until the grains are tender and the liquid is absorbed.
  3. Remove the bay leaf and allow the grain mixture to cool.
  4. In a small bowl whisk together the basil pesto, lemon juice, olive oil, black pepper, and a small pinch of sugar or honey until smooth.
  5. The dressing should be slightly loosened and pourable.
  6. In a large bowl combine the cooled bulgur and quinoa mixture with the chopped spinach, sun-dried tomatoes, spring onion, and mint.
  7. Drizzle over the pesto dressing and toss gently until everything is evenly coated.
  8. Top the salad with crumbled feta and the toasted seed mix.
  9. Serve immediately or store chilled for meal prep.
