Ingredients

  • 1 cup frozen blueberries
  • 1–2 tsp lemon juice
  • 1–2 tsp maple syrup or coconut sugar
  • ½ tsp vanilla extract
  • 1 cup plain double cream yogurt or Greek yogurt
  • Plant-based yogurt alternative if preferred

Directions

  1. Add the blueberries, lemon juice, and sweetener to a small saucepan.
  2. Cook over medium heat for about 5–7 minutes until the berries burst and the mixture thickens slightly.
  3. Allow the blueberry mixture to cool slightly.
  4. Blend until smooth or mash lightly if you prefer a chunkier texture.
  5. Prepare the Yogurt Swirl
  6. Spoon the yogurt into a bowl.
  7. Add the blueberry mixture and gently swirl it through the yogurt to create ribbons of fruit.
  8. Serve immediately.
