Blueberry Orange Compote

Ingredients

    • 2 cups blueberries (fresh or frozen)

    • â…“ cup orange juice

    • 1 tsp orange zest

    • 1–2 tbsp honey or maple syrup (optional)

    • 1 tsp lemon juice

    • pinch salt

    • ¼ cup Chia seeds

    Method

      1. Add blueberries, orange juice, orange zest, honey or maple syrup and a pinch of salt to a small saucepan.

      2. Simmer on medium-low heat for 6–8 minutes.

      3. Stir occasionally as the blueberries soften and begin to burst.

      4. Add the lemon juice at the end of cooking and stir to combine.

      1. If you prefer a thicker compote, mix the chia seeds into the compote and remove from heat

      2. let it sit until slightly thickened.

      1. Remove from heat and allow the compote to cool. It will thicken further as it sits.
