Ingredients

  • 1 can (400 g) black beans, drained and rinsed
  • 1 small red onion, finely chopped
  • 1 clove garlic, minced (or 1 tsp crushed garlic)
  • 1 tsp olive oil
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • ¼ cup corn (optional but recommended)
  • ¼ cup chopped coriander or parsley
  • 2–3 tbsp roasted red pepper hummus
  • 2–3 small whole wheat or corn tortillas
  • Avocado or guacamole
  • Salsa
  • Coconut yogurt

Directions

  1. Heat olive oil in a pan over medium heat.
  2. Add the chopped onion and garlic and sauté for 2–3 minutes until fragrant and softened.
  3. Add the black beans, cumin, smoked paprika, salt, and pepper.
  4. Cook for 3–5 minutes, lightly mashing some of the beans with a fork to create a thicker filling.
  5. Stir in the corn and chopped herbs.
  6. Spread roasted red pepper hummus on one half of each tortilla.
  7. Spoon the black bean mixture over the hummus.
  8. Fold the tortillas in half to close.
  9. Heat a dry non-stick pan over medium heat.
  10. Toast the folded tortillas for 2–3 minutes per side until golden and crispy.
  11. Slice the quesadillas and serve warm with avocado, guacamole, salsa, or coconut yogurt.
