Basil Pesto Butter Bean Stew (Creamy Tuscan-Style Beans)

Basil pesto butter beans

This basil pesto butter bean stew is a comforting, savoury dish built on simple ingredients and gentle flavours. Creamy butter beans simmer slowly with onion, garlic and olive oil to create a soft, aromatic base that feels nourishing and satisfying.

The magic happens at the end when fragrant basil pesto is stirred in off the heat, allowing the herbs to stay bright and fresh rather than cooked down. A little lemon zest and black pepper lift the dish and balance the richness of the beans.

The result is a glossy, spoonable stew that pairs beautifully with rice, roasted potatoes, flatbread or grilled fish. It’s a simple but deeply satisfying meal that works equally well for weeknight cooking or relaxed weekend dinners.
