Ingredients

  • 3 cups apples, peeled and finely diced or grated
  • ¾ cup oat flour
  • ½ cup coarse oats
  • 1 tsp baking powder
  • ½–¾ tsp cinnamon
  • ¼ tsp salt
  • 3 large eggs
  • 2 tbsp cashew nut butter
  • Splash vanilla extract
  • 1–3 tbsp milk or water if needed

Directions

  1. Preheat the oven to 180°C and line a baking tray with parchment paper.
  2. Lightly grease the parchment if needed.
  3. In a large bowl combine the oat flour, coarse oats, baking powder, cinnamon, and salt.
  4. Mix well and set aside.
  5. In a separate bowl whisk together the eggs, cashew nut butter, and vanilla until smooth.
  6. Fold the apples into the wet mixture so they are well coated.
  7. Add the dry ingredients into the apple mixture.
  8. Fold gently until just combined.
  9. The batter should be thick and scoopable, not runny.
  10. If needed, add a small amount of milk or water to loosen slightly.
  11. Scoop 2–3 tablespoons of batter per fritter onto the baking tray.
  12. Gently flatten each one slightly with the back of a spoon.
  13. Bake for about 22–25 minutes until set, lightly golden underneath, and springy to the touch.
  14. Flip halfway if you want extra browning.
  15. Allow the fritters to cool on the tray for about 10 minutes before moving.
  16. They will firm up as they cool.
