- Fresh cream: 100ml

- Lemon: 1, half sliced and half juiced
- Garlic butter: 2 tablespoons
- Black pepper corn flakes: 1 teaspoon
- Fresh rosemary: 1 sprig, finely chopped
- Salt: To taste
- Cooking butter: 2 tablespoons
- Olive oil: 1 tablespoon

Preparation: Preheat your oven to 200°C (390°F) for the baby potatoes. Pat the trout fillets dry with a paper towel and set aside.

Baby Potatoes: Coat the halved baby potatoes in 2 tablespoons of garlic butter and a pinch of salt. Place them in the preheated oven and bake for about 20-25 minutes, or until tender.

Shiitake Mushroom Sauce: In a small saucepan, melt 1 tablespoon of cooking butter and sauté 100g of sliced fresh shiitake mushrooms until tender. Add 100ml of fresh cream, along with salt and pepper to taste. Stir and simmer until it thickens into a sauce.

Trout Fillet: In a skillet, heat 1 tablespoon of cooking butter and 1 tablespoon of olive oil. Add 1 teaspoon of black pepper corn flakes to the skillet. Place the trout fillets skin-side down. Add slices of lemon and the juice of half a lemon, along with finely chopped rosemary. Cook until the trout fillets are cooked through and flaky, usually 6-8 minutes per side depending on thickness.
